The "grade" of a fabric or leather is used to determine pricing. The higher the grade, the higher the price.
While a higher grade often indicates that a fabric or leather is simply more expensive on its own, fabrics in particular may also be rated with a higher grade because of their patterns. If a fabric has a repeating pattern, and if that pattern is relatively large, then we have to use much more of it in order to match that pattern across sections of the furniture.
